Super Garlic Marinara

Super Garlic Marinara

For a long time I bought my marinara sauces. At a certain point I started wondering how hard it was to make my own. While I'm not ready to grow my own tomatoes, I found it's not that hard to start with a can of crushed tomatoes and go from there.

Makes enough for a small dinner party OR two people and a day of leftovers. Goes well with Mushroom Meatballs.

Ingredients:

  • 2 28oz cans of crushed tomatoes
  • 1 medium yellow onion
  • 3oz (approx.) of peeled garlic
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tsp salt (to taste)
  • 1 tsp pepper (to taste)

Directions:

  1. Dice onions and garlic finely.
  2. Heat a little oil in a skillet or wok.
  3. Sautee the garlic and onions for 7-10 minutes on medium heat until translucent.
  4. Increase heat to medium-high and add tomatoes, basil, oregano, salt, and pepper. Stir for 2 minutes until sauce bubbles.
  5. Reduce heat to medium-low and simmer for 15 minutes, stirring occasionally, until sauce thickens.

Good for up to 4 days in the fridge.
