Pickling

One day I was up on a hypomanic swing. And I decided, among other things, that I wanted to pickle my own sandwich toppings. So I went on YouTube and here's the result.


Good for approx 3-4 jars of pickling.

Ingredients:

  • Mason jars
  • Your choice of vegetables to be pickled
  • 4 cups vinegar
  • 4 cups water
  • 5 tbps salt
  • 2-3 tbsp pickling spices
  • 1-2 crushed garlic cloves
  • Fresh aromatic (like Dill or Bay Leaves. Optional)

Directions:

  1. Prep/slice the desired veggies and place in mason jars.
  2. (optional) Add desired fresh aromatic into the jars.
  3. Pour vinegar, water, and salt into a pot.
  4. Add pickling spices and garlic and bring to a boil.
  5. As soon as it boils, turn the heat off and immediately pour into the jars, over the vegetables until they are submerged.
  6. Take folded/wadded up paper towels and press them down into the jar to help submerge and cover the vegetables.
  7. Allow this to sit and cool to room temperature.
  8. Once cool, remove the paper towel, put the lid on, and refrigerate. Enjoy!
