Pickling
One day I was up on a hypomanic swing. And I decided, among other things, that I wanted to pickle my own sandwich toppings. So I went on YouTube and here's the result.
Good for approx 3-4 jars of pickling.
Ingredients:
- Mason jars
- Your choice of vegetables to be pickled
- 4 cups vinegar
- 4 cups water
- 5 tbps salt
- 2-3 tbsp pickling spices
- 1-2 crushed garlic cloves
- Fresh aromatic (like Dill or Bay Leaves. Optional)
Directions:
- Prep/slice the desired veggies and place in mason jars.
- (optional) Add desired fresh aromatic into the jars.
- Pour vinegar, water, and salt into a pot.
- Add pickling spices and garlic and bring to a boil.
- As soon as it boils, turn the heat off and immediately pour into the jars, over the vegetables until they are submerged.
- Take folded/wadded up paper towels and press them down into the jar to help submerge and cover the vegetables.
- Allow this to sit and cool to room temperature.
- Once cool, remove the paper towel, put the lid on, and refrigerate. Enjoy!
