Nib Nommers and Cacao Craze Cookies
Snopes' disproved Neiman Marcus costs-a-fortune cookies offered a killer recipe, urban legend or no. It also churns out a metric crapton of cookies in one go, so it became my go-to recipe when I needed party cookies, or office cookies. Heavily modified over the years, of course...
Makes approximately 112 small cookies.
Hardware you will need:
- Blender/food processor
- Large mixing bowl
- Cookie sheets
Ingredients:
- 2 cups unsalted butter (preferably softened at room temp)
- 4 eggs
- 2 tsp vanilla
- 1 tsp salt
- 2 tsp baking soda
- 2 tsp baking powder
- 5 cups oatmeal
- 24oz chocolate chips (I use 1 bag of semi-sweet)
- 2 cups white granulated sugar
- 2 cups brown sugar
- 4 cups flour
- 10oz bag of Raw Cacao Nibs OR 1 cup of Cacao Powder
Directions:
- Pre-heat oven to 375 degrees.
- Cream the butter and both sugars.
- Add eggs and vanilla. Mix well.
- Mix in flour, salt, baking powder, and baking soda.
- Take the 5 cups of oatmeal and blend or process them to a flour-like consistency, then add that and mix well.
- Add chocolate chips. Don’t be afraid to use your hands to knead if it gets too thick to stir (and it will).
- Choose your cookie type and mix in thoroughly.
a. If you are making Nib Nommers, add in the Raw Cacao Nibs.
b. If you are making Cacao Craze Cookies, use 1 cup Cacao Powder. - Roll into small balls and place 2 inches apart on the cookie sheet.
- Bake for 10 minutes at 375 degrees.
- Remove from the oven and allow 10 minutes on the pan before removing.
- Enjoy!
