Loaded Grilled Cheese

The contents of this recipe (and all ensuing photos) were obtained at great personal peril from deep cover as an innocently hungry daughter, asking her Dad just how he does the grilled cheese magic.


Ingredients:

  • Cheese of your choice (though if you say "American" I will find you.)
  • Bread of your choice
  • Butter. Lots.

Optional add-ins:

  • Bacon
  • Avocado
  • Turkey
  • Tomato
  • Use your imagination!

Directions:

  1. If there are any add-ins, prepare them in advance.
    a. Fry the bacon
    b. Cut the avocado and tomato as desired
  2. Heat a small pan on low-low medium heat.
  3. Add 1-2 tbsp butter (there is no “too much” butter).
  4. Put two slices of bread on a plate. Add desired amount of cheese to one slice of bread. The more you put on, the harder it will be to melt.
  5. If you have add-ins, only add meats (like turkey and bacon) at this stage.
  6. Put the sandwich together and once the butter is all melted and add the sandwich to the pan. Swirl it around in the butter.
  7. Peek under it every now and then to keep an eye on the browning of the bread. The higher you have the heat, the less time you have until you burn it, so make sure you KEEP THE HEAT ON LOW.
  8. Keep an eye on the sandwich and keep moving it around.
  9. Cut off another tbsp of butter. Remove the sandwich and add the extra butter. Return the sandwich to the pan on the uncooked side and continue spinning/swirling it.
  10. Cook until the bread is browned, but don’t let it burn. DO NOT GET DISTRACTED. If the cheese isn’t fully melted at this point, then finish melting it by putting the sandwich in the microwave.
  11. Once the sandwich is done, remove it, separate the halves, and add any fresh ingredient add-ins (like avocado and tomato) into the sandwich. Close the sandwich.
  12. Enjoy!

Tips: Best to cook one at a time and in a smaller pan. Smaller pans mean less butter used, too. Do not be afraid to add more butter as needed. The chef says, “Love your grilled cheese sandwich, and it will love you back.”
