Shortbread Cookies

Shortbread Cookies

Sergey loves crispy cookies. In search of ways to get homemade cookies like that, he found a cookie press that made tiny cookies with lots of ridges. Success! Tiny little crunches of joy.


Makes about 70 tiny cookies

Tip: We use the OXO cookie press to get the cookies beautifully shaped.

Ingredients

  • 1 ½ sticks butter, at room temp
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 large egg, at room temp
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, cream together butter, sugar, and salt. Beat until light and fluffy. Add vanilla and eggs one at a time, continuously beating.
  3. Gradually add flour, beating until well incorporated.
  4. If using a cookie press, press onto uncovered metal cookie sheet. If not using a press, line sheet with parchment paper and line it with dough balls or cutout type cookies.
  5. Bake for 10 to 12 minutes or until the cookies are golden brown on the edges.

TIP: If you use a cold egg, or if the dough is too thick for the cookie press, microwave the dough for 10-18 seconds to soften it.
