Shortbread Cookies
Sergey loves crispy cookies. In search of ways to get homemade cookies like that, he found a cookie press that made tiny cookies with lots of ridges. Success! Tiny little crunches of joy.
Makes about 70 tiny cookies
Tip: We use the OXO cookie press to get the cookies beautifully shaped.
Ingredients
- 1 ½ sticks butter, at room temp
- ½ cup sugar
- ¼ teaspoon salt
- 1 large egg, at room temp
- ½ teaspoon vanilla extract
- 2 cups all-purpose flour
Directions:
- Preheat oven to 400 degrees.
- In a large mixing bowl, cream together butter, sugar, and salt. Beat until light and fluffy. Add vanilla and eggs one at a time, continuously beating.
- Gradually add flour, beating until well incorporated.
- If using a cookie press, press onto uncovered metal cookie sheet. If not using a press, line sheet with parchment paper and line it with dough balls or cutout type cookies.
- Bake for 10 to 12 minutes or until the cookies are golden brown on the edges.
TIP: If you use a cold egg, or if the dough is too thick for the cookie press, microwave the dough for 10-18 seconds to soften it.
