Lembas Bread Cookies

My youngest sister and I played around with this recipe a bit. We found it online, but decided it was not sweet enough. Difficult to tweak without making it too dense, but it cane be done!


Ingredients:

  • 2 ½ cups flour
  • ½ cup butter
  • 1 cup brown sugar
  • 2/3 cup heavy whipping cream
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon honey
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 425F. Mix flour, baking powder, and salt in a large bowl.
  2. Add the butter and mix until there’s fine granules.
  3. Add sugar and cinnamon. Mix thoroughly.
  4. Add cream, honey, and vanilla. Mix until thick dough forms.
  5. Roll dough out into a ½ inch sheet. Cut out 3 inch squares and transfer to a cookie sheet.
  6. Criss cross each square lightly with a knife.
  7. Bake for about 12 minutes, or until set and lightly golden.
  8. Let cool completely before eating.
