Lembas Bread Cookies
My youngest sister and I played around with this recipe a bit. We found it online, but decided it was not sweet enough. Difficult to tweak without making it too dense, but it cane be done!
Ingredients:
- 2 ½ cups flour
- ½ cup butter
- 1 cup brown sugar
- 2/3 cup heavy whipping cream
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 tablespoon honey
- 1 teaspoon vanilla
Directions:
- Preheat oven to 425F. Mix flour, baking powder, and salt in a large bowl.
- Add the butter and mix until there’s fine granules.
- Add sugar and cinnamon. Mix thoroughly.
- Add cream, honey, and vanilla. Mix until thick dough forms.
- Roll dough out into a ½ inch sheet. Cut out 3 inch squares and transfer to a cookie sheet.
- Criss cross each square lightly with a knife.
- Bake for about 12 minutes, or until set and lightly golden.
- Let cool completely before eating.
