Caprese Toast

Caprese Toast

What started as Sergey and I downing Bucca di Beppo sized caprese salad servings morphed into us making our own, and then adjusting it into a "light meal" or "healthy snack" depending on how many you make. Two is a snack, four is a light meal.


Roughly 350-400 calories per piece

Ingredients

  • Fresh mozzarella
  • Firm tomatoes
  • Your choice of bread
  • Your choice of spread (suggest: avocado or fresh pesto)
  • Salt & Pepper

Directions

  1. Toast the bread to your preference.
  2. Spread the bread with your choice of spread. If it's avocado spread, consider salting it a little.
  3. Put two slices of mozzarella, and then two slices of tomato, on each slice of bread.
  4. Salt & pepper the snacks to taste. Enjoy!
