Caprese Toast
What started as Sergey and I downing Bucca di Beppo sized caprese salad servings morphed into us making our own, and then adjusting it into a "light meal" or "healthy snack" depending on how many you make. Two is a snack, four is a light meal.
Roughly 350-400 calories per piece
Ingredients
- Fresh mozzarella
- Firm tomatoes
- Your choice of bread
- Your choice of spread (suggest: avocado or fresh pesto)
- Salt & Pepper
Directions
- Toast the bread to your preference.
- Spread the bread with your choice of spread. If it's avocado spread, consider salting it a little.
- Put two slices of mozzarella, and then two slices of tomato, on each slice of bread.
- Salt & pepper the snacks to taste. Enjoy!
